FIELD: food industry.
SUBSTANCE: canned food is prepared by cutting, blanching and chopping of part of onion, cutting and chopping of mutton and mixing of the said ingredients with chicken eggs, table salt and hot black pepper to produce forcemeat. Then the forcemeat is formed into fricandels, potatoes and remaining part of onion are cut and blanched, rhubarb is cut and frozen, rice is boiled until its mass increases twice as compared to initial state. After that potatoes, non-chopped part of onion, rhubarb, rice, kefir and table salt are mixed under oxygen-free conditions; fricandels, produced mixture and bone broth are packed, vacuum-sealed and sterilised.
EFFECT: invention allows manufacturing of canned food with increased digestibility.
