FIELD: chemistry.
SUBSTANCE: method of glucose-galactose syrup production includes receiving milk serum, its separation, pasteurisation, cooling, ultrafiltration and electrochemical activation of filtrate until pH 4.3-5.7 is reached. Lactose hydrolysis by introduction of enzyme preparation and thermostating during 3-3.5 hours at temperature 43-54°C, until degree of hydrolysis equal 50-90% of initial lactose concentration is reached, are carried out. After that thickening and inactivation of enzyme in vacuum evaporation device until weight fraction of dry substances is not less than 60% are performed.
EFFECT: obtaining product with higher nutrition value.
