FIELD: milk industry. SUBSTANCE: method involves collecting and reserving lactoserum; heating, separating, pasteurizing and cooling lactoserum; providing isomerization and concentration; drying concentrated lactoserum; providing isomerization, without introducing of chemical reactants, by electrochemical activation of lactoserum to pH=(11 plus and minus 0.5) units, with following thermostatic controlling at temperature t=(70 plus and minus 0.5) C for 15-25 min; providing neutralization by sour lactoserum until pH= (7 plus and minus 0.5) units. Method allows lactoserum enriched in lactulose and products of alkaline hydrolysis of lactoserum proteins to be obtained. EFFECT: increased bifidogenic effect and improved nutritive value of resultant product. 1 dwg
