FIELD: dairy industry.
SUBSTANCE: disclosed is a method of producing dry milk whey, characterized by that curd whey is fed into a regeneration section of a pasteurisation-cooling plant for heating, then it is sent to a separator, then whey is pasteurized in a pasteurisation-cooling unit at temperature of 75 °C and placed in the cathode space of the electroflotation installation, the NaCl electrolyte solution is placed in the anode space, voltage U=20 V is supplied to the installation, and consumed current is I=150 mA, duration of electroactivation is 15 min, active acidity of separated serum at the end of electroflotation is pH 11±5, then the milk whey solution is transferred into an intermediate container, where it is maintained at 70±5 °C for 15-25 minutes, then acidified with serum with titratable acidity K=200±15 °T to pH 7.5±0.5, thickened at 60±2 °C to dry substances content of 45±5% and delivered to a spray drier, wherein weight fraction of lactulose in dry milk whey is 20-25%, whey protein hydrolysis products – 30-40%.
EFFECT: invention enables to obtain bifidogenic milk whey with lactulose in the process of electric activation, as well as to accelerate the production process.
