FIELD: milk industry, in particular, production of lacroserum concentrate.
SUBSTANCE: method involves collecting, stocking, heating, separating, pasteurizing, transforming and concentrating of lactoserum by condensation or drying process. Lactoserum transformation is provided by electrolytic activation for 10-15 min simultaneously in cathode chamber of apparatus by adding 1-5% of carbamide until pH value is 11.5-12.5 units and in anode chamber until pH value is 1.0-2.5 units, followed by mixing of both fractions.
EFFECT: increased extent of isomerization of lactose to lactulose and improved baking capacity of resultant concentrate.
