FIELD: physics; measurement.
SUBSTANCE: present invention relates to devices for continuous monitoring formation of milk-protein coagulum when making cheeses and fermented milk products in the diary industry, as well as for continuous monitoring of the process of structure formation in other fields of industry. The rheometer has a base, a measuring grooved cylinder, a springing element, step motor, device for measuring angular displacements and a control module. The springing element is in form of a calibrated helical spring, the top end of which is joined to the shaft of the step motor. The bottom end of the springing element is joined to measuring roll, fitted in precision ball bearings in the central bushing, fixed to the base. The measuring grooved cylinder is locked onto the bottom end of the measuring roll. The device for measuring angular displacements is made in form of a transparent disc, around which there is a radial line scale. A slit permanent light source is opposite the line scale on one side of the transparent disc. The slit of the light source is parallel the lines of the scale. On the other side of the disc and opposite the slit permanent light source, there is pulse counter. The transparent disc is fixed on a cog-wheel, the shaft of which is fixed in the precision ball bearing, fitted in the casing which in turn is fixed to the base. The driven gear interlocks with the driving gear. A transmission ratio of not less than 1:10 is provided.
EFFECT: simpler design of the rheometer and wider field of its use.
