FIELD: food industry.
SUBSTANCE: invention relates to food industry, particularly to preparation of culinary products from salmon fishes. The method includes washing, salting, spicing and stewing in vegetable oil industrially portioned and frozen fish pieces. Fish pieces are stewed adding frozen black currant in the amount of 100g for 1kg of fish during 30-40 min at 150-160°C.
EFFECT: obtaining culinary products from frozen salmon fishes with improved organoleptical properties and increased biologically active supplements content.
