FIELD: food industry.
SUBSTANCE: invention relates to processed meat production method, namely to device for meat processing. In this device runoff of incoming streams is controlled and mentioned streams are mixed to provide consolidated outcome stream. Processing method includes: supply of big quantity of incoming streams of food ingredients which have different compositions and contain at least one stream of meat ingredients into mixing device; measurement at least one characteristic of mentioned composition at least one stream of meat ingredients; regulating of mass ratios of incoming streams of meat ingredients based on mentioned at least one measured characteristic of content using direct analysis of incoming substances to provide mentioned at least one characteristic of composition within the prescribed limits; supply of incoming streams of meat ingredients into processing device, processing of conjointly incoming streams of meat ingredients; creation of combined stabile meat mixture by processing of incoming streams of meat ingredients which has at least one characteristic of composition within the prescribed limits.
EFFECT: invention allows to reduce required floor space, reduce prime costs and costs of production and reduce device cleaning time.
