FIELD: food industry.
SUBSTANCE: invention relates to production of meat analogues. Disclosed is a method of producing a meat analogue for use in food products for humans, animals or domestic animals as a meat substitute, involving: a) introducing the meat mixture containing protein into a heating apparatus and heating the meat mixture to a temperature above the melting point of the protein to obtain a heat treated product, b) transfer of heat-treated product to cooling unit and cooling of heat-treated product to temperature below boiling point of water at ambient pressure at the outlet of cooling unit and c) separating the cooled thermally treated product into pieces, wherein from about 1 wt.% to 30 wt.% pieces are repeatedly introduced into the process.
EFFECT: invention provides an improved method for production of meat analogues with increased stability, at which the processed nutritive material can be used so that production residues can be reintroduced into the process without deterioration of quality, and enables to improve taste properties of the meat analogue pieces.
