FIELD: food industry.
SUBSTANCE: invention is related to food industry, mainly to formed fish products production. The method includes salting of fish, maturating it, adding components approved by the recipe, mixing it, forming the obtained mixture in covering to obtain formed fish product. Fillet is used. The salting and maturating of fish fillet is performed simultaneously in salty solution with spices and complex supplement for maturating during 3 to 4 days at the temperature from +2°C to +5°C. After salting and maturating fillet is dried during 3-4 hours at temperature from +20°C to +24°C. Formed fish product is kept under load with equal pressure of 6-8 g/cm2.
EFFECT: invention allows for product storage dates increase.
