SUBSTANCE: invention relates to fish industry. Moulded structured product from low-fat animal raw material of water origin contains raw material salted and dried to a residual moisture content of 15% and ground to a particle size of not more than 0.7 mm with a mixture of sodium chloride and potassium chloride 1.5-2.0%, and placed in a solution of gelatine, prepared on broth obtained during cooking wastes from raw material processing, or water, with further addition of preservatives, water-soluble vitamins, biotin and ascorbic acid to the mixture.
EFFECT: invention enables to obtain a ready-to-eat moulded jellied product enriched with vitamins.
