FIELD: food industry.
SUBSTANCE: spray-dried agglomerated starch hydrolisate has following properties: dextrose equivalent (DE) 5-35, moisture content <6% of mass, bulk apparent density 0.4-0.6 g/sm3, compactibility less than 10%, particles size distribution, according to which less than 5% of particles are less than 500 micron and less than 5% of particles are less than 53 micron, average particles size is 120-250 micron, mechanical stability >95%, static natural angle of slope less than 45° at fluidity changes and dissolution speed <180 seconds. This product is obtained in spray drier chamber, containing double-fluid atomisers, by spraying of starch hydrolisate and vapour at ratio of the latter and hydrolisate 0.05-0.4 for warming up and mist-spraying of hydrolisate on dry hydrolisate powder supplied into upper part of drying chamber. Ratio between quantity of powder and quantity of starch hydrolisate solution in the recount to the mass of the product makes 0.6-1.1. Spray-dried starch hydrolisate particles are supplied into boiling layer in chamber for further drying and/or cooling.
EFFECT: obtaining of products with high dissolution speed comparing to already known.
