SUBSTANCE: method provides for extraction of tangerine zest by liquid nitrogen with separation of according miscella, artichoke and pear preparation, cutting and drying in microwave field at specified process parametres, artichoke roasting, finish drying of pears by convection method, mixing artichoke and pears as per mass ratio of 3:2, impregnation of produced mixture by separated miscella with simultaneous pressure rise, pressure drop down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of separated nitrogen.
EFFECT: production of flavoured coffee drink using non-waste technology.
