FIELD: food industry.

SUBSTANCE: invention refers to technology of production of substitutes for coffee. The method provides preparation of prescription components, extraction of caraway seeds by liquid nitrogen with corresponding miscella separation, yacon cutting, drying in the microwave field at the given process parametres and its frying, drying in the microwave field at the given process parametres and convective drying of rosehips, apples and pears, frying barley grains, mixing of yacon, rosehips, barley grains, apples and pears. Soaking of the obtained mixture with separated miscella is carried out with simultaneous increase of pressure, and release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen.

EFFECT: method enables to obtain instant powder for new flavoured coffee drink production from non-traditional raw materials using non-waste technology.
