FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. Preservation method includes pre-processing and packing of scallops into jars. Scallops are filled with hot water at 85°C for 2-3 minutes. After that water is replaced with filler at 95°C, jars are sealed and sterilised in autoclave.

EFFECT: invention allows to decrease sterilising duration, decrease inequality of thermal processing and provide saving of thermal energy.
