FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. Jars with scallops are filed with water at 85°C for 2-3 minutes. After that water is changes with filler at 97°C, jars are sealed, sterilised in autoclave according to mode, providing for two-stage refrigeration. Sterilisation is performed in the first autoclave while non-condensing and in the second autoclave or in condensing container.
EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
