FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. According to the method proposed pre-processed scallops are put in jars and warmed up by hot water at 85°C during 2-3 minutes. After that water is exchanged with filler at 97°C and sterilised in autoclave according to the new mode with following cooling in the other autoclave or a container.

EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
