Ternary polyfunctional food composition for food products for specialized purposes on meat and fish base contains water-hydrated collagen-containing fermentolysate of Alaska pollack skin (grams of water per gram - 1:3) 45–55, hydrated with sesame water (g ingr./g water - 1:5) 20–40 and bird cherry flour (g ingr./ g water - 1: 2) 15-25. Ingredients are specified in weight parts.

EFFECT: invention allows to create a composition with high biological value, content of high-grade protein, polyunsaturated fatty acids, macro- and microelements, vitamins, as well as flavonoids and antioxidant properties, the introduction of which improves the structure formation of the ready product, increases its quality indices and overall nutritive value, and enriches with substances useful for the human body.
