FIELD: food industry.
SUBSTANCE: method is implemented by following. Directly squeezed juice is concentrated by water graduation in vacuum at rarefaction (1-10) Pa and at temperatures not more than 50°C with concentrated juice production. Concentrated juice is dried at atmosphere pressure and at temperatures not more than 50°C till soluble dry substances content makes not less than 80° Brix. Condensate appearing when evaporating the juice is collected and used for reconstitution of concentrated juice by adding the condensate to the dry pastelike juice till soluble dry substances content needed.
EFFECT: increased quality of reconstituted juice as maximum of concentrated juice biological activity is kept and reconstitution is performed with help of the condensate obtained when vacuum evaporation of directly squeezed juice is performed (the condensate has aroma of initial raw materials).
