FIELD: food industry.
SUBSTANCE: invention relates to canning industry namely to custard squash preservation method. Custard squashes are preserved by preliminary heating with water and following filling. Then they are put into microwave chamber, sealed and sterilised in autoclave according to the new mode.
EFFECT: mode provides for the decrease of process duration, saving heating energy and finished product quality increase.
