SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of jeera by liquid nitrogen to separate according miscella, yacon cutting, drying in microwave field at the specified parametres of the process and frying. Also rosehips, apples and pears are dried in microwave field at the specified parametres of the process and additionally dried by convection method, barley grain is fried, yacon, rosehips, barley grain, apples and pears are mixed, pressure is increased, then reduced down to atmospheric value with simultaneous freezing of mixture and its cryo-grinding in the medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials, and also provides for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation.
