SUBSTANCE: invention is related to the meat industry, mainly cooked-smoked sausages production. Production method provides for half carcass butchering, cooling, deboning, trimming, mincing, preparation of mince. Activated by β-galactosidase starter Bifidobacterium longum B379M or combined starter consisting of B. longum B379M and L.plantarum "8П-А3" activated β-galactosidase, in ratio 2:1, B. longum B379M or combined starter is taken in quantity 4-5% for 100 kg of main raw material. After that forming of sausages is performed, as well as tying, settling and thermal treatment.

EFFECT: invention provides decreased subsidence time, increased organoleptic properties.
