FIELD: food industry.
SUBSTANCE: invention refers to fat-and-oil industry. Dietetic spread consists of diary butter, refined deodorised vegetable oil, emulsifier, dry skim milk, aromatiser, table salt and water as source components. A fat-and-oil phospholipid product is used as emulsifier; it is produced by means of fourfold mixing of preliminary heated food vegetable phospholipids with organic solvent, by adding 5-10 % to weight of phospholipids solution of citric acid in watered acetone into solvent before the third mixing; also acetone is taken at amount of 1.0-2.5 % to weight of phospholipids; further solvent is separated from phospholipids with successive extraction of phospholipids with ethyl alcohol at ratio phospholipids - ethyl alcohol (1:3)-(1:7) and temperature 40-60°C; thus alcohol-soluble and alcohol non-soluble fractions of phospholipids are produced; the alcohol-non-soluble fraction of phospholipids is separated from an alcohol-soluble one with successive drying of the alcohol-non-soluble fraction under vacuum and production of the fat-and-oil phospholipid product. All components are taken at specified ratio.
EFFECT: disclosed method of dietetic spread production.
