FIELD: fat-and-oil industry.
SUBSTANCE: dietary margarine contains refined deodorized vegetable oil, dried fat-free milk, edible salt, colorant, vegetable food phospholipids and water, and additionally contains palm oil having melting temperature of 32-36 C, and sodium alginate. Fat-and-oil phospholipids product used as vegetable food phospholipids is obtained by extraction of phospholipids concentrates by ethyl alcohol with phospholipids concentrates - ethyl alcohol ratio of (1:3)-(1:7) at temperature of 40-60 C so as to produce alcohol-insoluble and alcohol-soluble fractions of phospholipids. Alcohol-insoluble phospholipids fraction is further separated from alcohol-soluble fraction and alcohol-insoluble fraction is dried under vacuum for producing of fat-and-oil phospholipids product. All components are used in predetermined ratio.
EFFECT: provision for obtaining of product with increased stability, low splashing coefficient and prolonged shelf life.
