FIELD: food industry.
SUBSTANCE: method provides for introduction of an antioxidant along with a cleaning agent at the cleaning stage. For this invention an extract is used as the antioxidant and the extract is obtained by mixing the preparation obtained by granulating the low-lying peat whose decay degree is 30-35% followed by heat treatment at a temperature of t=110-120°C for 2-3 hours with an aqua ammonia having a concentration of 1.2-1.5% with the ratio of components being 1:3.5-4 and heat treatment of the obtained mixture at a temperature of t=130-150°C for 3-5 hours followed by extraction of the target product with water at a temperature of t=80-90°C with mass ratio of peat and water being 1:3 followed by separation of the finished extract and the finished extract at the cleaning stage is introduced at a rate between 0.000001 and 2% to the vegetable oil weight.
EFFECT: improved stability of the vegetable oil for oxidation.
