FIELD: agriculture.
SUBSTANCE: device comprises cylindrical body, inside of which nozzle is arranged along its axis, which is communicated to source of steam and comprises ejection holes that are connected to side nozzle, along which milk is supplied. Along nozzle axis there is tube arranged, which communicates to source of stem via nozzle tip. Ejection holes of nozzle are located on section of nozzle critical section, and tube end with nozzle tip is located in the range from lower limit of nozzle critical section and to ending of section, where nozzle critical part changes to supercritical part. Milk pasteurisation takes place at the temperature of +55÷60°C instantaneously due to impact wave that occurs in nozzle and sharply increases temperature and pressure of milk to break milk fat balls and to homogenise milk.
