FIELD: food industry.
SUBSTANCE: method of production of vegetarian sausage involves preparing polymer jacket and filler, filling the jacket with filler, tying it and boiling it in the steam for 25-30 minutes, and the filler contains corn starch or potato starch in amounts of 1-8 wt %, girasol mash and/or banana mash, flavour additives selected from the following: table salt, tomato paste, caraway, ground red pepper, parsley, sodium guanylate, sugar. Additionally, filler can contain mashed potatoes.
EFFECT: sausage suggested by the method is a delicious and high-calorific product enriched with fibre, vitamins and microelements suitable for vegetarian diet.
