FIELD: food industry.
SUBSTANCE: invention is related to food industry, in particular to production of sausage products. Method provides for thermotolerant casing production, straining of fresh washed or peeled potatoes through the mesh filter with holes diametre not more than 1.25 mm, straining of fresh curdy mass through the mesh filter with holes diametre not more than 1.25 mm, mixing of potato and curdy masses in ratio 1:2, filling the casing with obtained mixture, its fasciation and steam boiling during 25-30 minutes.
EFFECT: method provides production of product enriched by easy accessible proteins, amino acids, starch, mineral salts and vitamins.
