FIELD: process engineering.

SUBSTANCE: invention relates to food-canning industry, namely to vacuum evaporation apparatuses used in production of pureed fruits and vegetables. Proposed apparatus consists of several identical-design box-like sections. Top cover of every section accommodates branch pipe to withdraw evaporated vapors while separator to entrap product drops from discharged vapors is arranged under said cover. Apparatus bottom part is made up of two trough bottoms with feed pipe arranged at their joint and provided with spraying nozzles to inject initial product fitted regularly spaced at tope part. Each trough bottom accommodates horizontal shaft with tape coil fitted thereon. Trough bottom end is provided with product discharge branch pipes communicated via common collector with pump communicated with feed pipe and straying nozzles of next section.

EFFECT: higher quality of finished products.
