FIELD: food industry.
SUBSTANCE: in spiral evaporator the double-wall body connected with vacuum pump is installed vertically and has a truncated cone shape whose top faces the side of finished product discharge. The lower part of the body at the end is connected with unloading branch pipe with sluice lock. Inside the body there is a coaxial fixed cylindrical pipe for supplying heat carrier. The upper part has a fluid-drop shape and is connected with the branch pipe to withdraw vapourising water steam. There is a spiral screw of varied pitch and diametre located between the fixed cylindrical pipe and the internal wall of the double-wall body. The screw coils are rigidly interconnected by means of four longitudinal pipes. At the both ends of the body, the pipes are interconnected by means of naves inside of which there are branch pipes for supplying of heat carrier. The space between the both watts of the double-wall body is connected with fixed cylindrical pipe by means of pipeline. The opposite end of the double-wall body is connected with the branch pipe for withdrawal of the discharge heat carrier. Inside the double-wall body there are guides installed for zigzag movement of the heat carrier in it. On the external wall of the double-wall body there is a loading branch pipe with vacuum sluice lock for feeding raw product.
EFFECT: invention enables to improve quality of the finished product, intensify evaporation, reduce energy resources consumption and increase productivity.
