FIELD: food industry.
SUBSTANCE: invention relates to the process of producing coffee substitutes. The method provides for preparing the formula components and cutting them. Chicory roots are dried in a microwave field at given process parametres and roasted. Barley grains, rye grains, acorns and cacao shell are roasted. Said components are mixed up and the obtained mixture undergoes cryogenic grinding in the liquid nitrogen environment.
EFFECT: invention ensures obtaining the target product using a waste-free technology.
