FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Invention method provides for preparation of ingredients, extraction of cocoa husks by liquid nitrogen with corresponding miscella separation. Prepared girasol is cut, dried in the microwave field at preset process parametres and then roasted. Also barley grain and rye grain are fried. The obtained mixture of girasol, barley grain and rye taken in mass ratio of 2:2:1 is impregnated with separated miscella raising the pressure at the same time. Then the pressure is released until the atmospheric pressure with simultaneous freezing of mixture and cryomilling of it in medium of evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink according to nonwaste technology.
