FIELD: food industry.
SUBSTANCE: method of producing biomass of yeast involves yeast cultivation in aeration conditions at 25÷40°C and pH 3.0÷6.0 on nutritional medium containing sources of carbon, nitrogen, mineral additives and growth stimulants. For the nutritional medium hydrolyzates or enzymolyzates of grain material and/or refuse of flour industry are used. For biostimulants of growth of the yeast cells the following is used (wt %): sodium sulfite (1·10-4÷1·10-8), gibberellic acids (1·10-7÷1·10-12), water soluble oligosaccharides of chitin (1·10-5÷1·10-9) with their total concentration (1·10-5÷1·10-10)% to the volume. Crude protein content in the finished product is 42.1%.
EFFECT: increased growth of biomass, lower costs for its production and higher quality of the finished product concerning the protein content.
