FIELD: food industry.

SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of red tea by liquid nitrogen with corresponding miscella separation and cutting. In addition, the method involves drying yacon in microwave field at preset process parametres and roasting yacon, drying rosehips, apples and pears in microwave field at preset process parametres and drying them up by convective method. Moreover, barley grain is roasted and mixed with yacon, rosehips, apples and pears. Also the method involves impregnating the obtained mixture by separated miscella with simultaneous pressure boost and pressure release until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.

EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
