FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components and in extracting cinnamon with liquid nitrogen whereupon corresponding miscella is separated. Further, yacon is cut, dried in SHF field at specified parametres of the process and roasted; hips, apples and pears are also dried in SHF field at specified parametres of the process and convective finished dried; barley grain is roasted; yacon, hips, barley grain, apples and pears are mixed and soaked with separated miscella. Simultaneously, first pressure is built up then dropped to atmospheric; at the same time mixture is frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
