FIELD: food industry.
SUBSTANCE: method of manufacturing of a juice-containing beverage envisages preparation of water, preparation of basic and auxiliary ingredients, ingredients mixing, sterilisation and bottling. Water preparation proceeds in three stages. At the first stage one performs mechanical treatment, at the second stage one performs sorption treatment, at the third stage one performs reverse osmosis treatment. Preparation of auxiliary ingredients is done through dissolution in water of a sweetener, citric acid and a flavouring agent. Then the prepared ingredients are mixed in the following proportion: per 1000 l of product one takes 13.3-23.5 kg of concentrated juice or puree with dry solids weight ratio 28-70%, 1.5-3.0 kg of food citric acid, 0.1-0.2 kg of flavouring agent, 0.2-0.3 kg of sweetener. Sterilisation proceeds in two stages; at the first stage sterilisation is performed at 79-81°C during 25-30 seconds, at the second stage sterilisation is performed at 103-107°C during 25-30 seconds.
EFFECT: invention enables improvement of the quality of the beverage manufactured due to utilisation of high quality water produced at low labour cost and reduced duration of raw materials thermal treatment.
