FIELD: chemistry.
SUBSTANCE: invention relates to the technology of processing and storing plant food substances with intracellular fluid and can be used in the food industry, in trade and everyday life. Plant food substance is treated with a catholyte while continuously measuring redox potential of the intracellular aqueous fluid and bringing it to values which the said substance has in fresh form. The food products with intracellular fluid used can be vegetables and fruits.
EFFECT: restoration of quality of plant food substances with intracellular aqueous fluid after a certain storage period by lowering the redox potential of their intracellular fluid.
