SUBSTANCE: invention relates to the dairy industry and agriculture. Proposed is a method for producing butter, wherein milk is received, subjected to primary processing by conducting cathodic electrochemical activation of the milk for 15 minutes, wherein the value of the oxidation-reduction potential of processed milk changes from +1180 to -800 mV, cream is separated from milk by separation, the cream is normalised, purified, pasteurised, cooled, held, transformed, or churned until butter is formed.

EFFECT: invention provides a possibility of producing butter exhibiting improved organoleptic properties, while improving the quality and increasing the duration of preserving the beneficial properties of butter.
