FIELD: food industry.
SUBSTANCE: method includes preparation of initial raw material. Prepared raw material is homogenised and extracted. Obtained extract mixed with ammonium sulphate in ratio of 0.055 - 0.110 kg/l of the extract. Obtained mixture is settled till division of the mixture onto liquid phase and sediments. Milk-clotting enzyme is separated from obtained liquid phase by running of liquid phase through the column with hydrophobic sorbate with the following impurity removing by column washing, stripping of milk-clotting enzyme and drying of the obtained end product.
EFFECT: obtained enzyme product purity increase and decrease of its losses.
