FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in production of combined high-protein products and food concentrates. Method includes preparation of protein-mineral paste by soaking soy seeds in water, sprouting until sprout length is 10-20 mm, boiling of sprouted seeds in water at the temperature of 100°C with exposure of 30-35 minutes and grinding of seeds to paste-like condition. Mixing of protein-mineral paste with flour cereal component produced on the basis of either buckwheat or barley or wheat or corn or millet or oat or rice cereal at the ratio of 1:1 and making dough on the basis of mixture. Forming granules from protein-hydrocarbon dough with diametre of 3-4 mm, with their further drying for 30 minutes at the temperature of 150°C, grinding and sizing into fractions of required size.
EFFECT: invention makes it possible to produce high-quality food products having high food and biological value and consumer properties enriched with mineral substances, with relatively low cost and long shelf lives.
