FIELD: medicine.

SUBSTANCE: method includes preparation of meat-extract agar, its pouring into Petri dishes, taking samples from food products, preparation of suspension from food product sample, preparation of decimal dilutions of analysed suspension and placement of decimal dilutions of suspension in Petri dishes, cultivation and counting number of colonies by formula: x=an×10, where x is quantity of mesophilic aerobic and optionally anaerobic microorganisms, a is quantity of grown colonies, n is degree of dilution. For preparation of decimal solutions of analysed suspension 0.6-0.8% solution of meat-extract agar is used, decimal dilutions of analysed suspension are placed on membrane filters, located on the surface of meat-extract agar in Petri dish.

EFFECT: method is original in solution, simple in implementation, informative, provides statistically reliable results; allows to reduce considerably consumption of nutrient media, sterile bacteriological dishes and time for performing analysis; allows to give real quantitative evaluation of content of microorganism which give fusion growth and form very small colonies, and allows to study intra-population processes with application of light microscopy.
