FIELD: food industry.
SUBSTANCE: method includes addition of (3,5-di-tret-butyl-4-hydroxyphenyl) methylenediphosphonic acid in concentration of 1*10-4M into liver homogenate, then spectrophotometric determination of dyed complex of finished product of peroxide oxidation of lipids - malonic dialdehyde (MDA) with thiobarbituric acid.
EFFECT: invention makes it possible to increase efficiency of suppression of speed of peroxide oxidation of Russian sturgeon liver lipids by addition of antioxidant additives in minimum concentrations, to reduce risk of side effects.
