SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. Method provides for preparation of recipe components, mixing of cocoa husks, cinnamon and vanilla and extraction of obtained mixture by liquid nitrogen with corresponding miscella separation, scorzonera cutting, drying in microwave field at preset process parametres and frying, barley grain and oat grain frying, mixing of scorzonera, barley grains and oat grain, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to produce new coffee beverage of non-traditional raw materials according to a nonwaste technology.
