SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. Method provides for preparation of recipe components, mixing of cocoa husks, cinnamon and vanilla and extraction of obtained mixture by liquid nitrogen with corresponding miscella separation, oyster plant cutting, drying in microwave field at preset process parametres and frying, barley grain and oat grain frying, mixing of oyster plant, barley grains and oat grain, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost till pressure level of nitrogen saturated vapours at impregnation temperature and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: proposed invention provides for improvement of drink organoleptic properties due to its enrichment with extractive substance of miscella and their preservation.
