SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, mixing cocoa husks, cinnamon and vanilla and extracting the obtained mixture with liquid nitrogen with corresponding miscella separation, cutting yacon, drying it in a microwave field at preset process parametres and roasting it. Besides the method involves roasting barley and oat grains, mixing yacon, barley and oat grains and impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost. Also according to the method, the pressure is released to atmospheric pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to produce a new coffee beverage according to nonwaste technology.
