FIELD: food industry.
SUBSTANCE: method envisages milling grain raw material to a particle size of no more than 800 nm, mixing with water at a temperature of no more than 50°C, adding (at the above temperature) enzyme preparations containing α-amylase, glucoamylase, xylanase, celluxyl and protease and maintaining during 0.5 h. The produced mixture is chilled to a temperature of 30°C and fermented.
EFFECT: invention allows to reduce energy efficiency of alcohol production and increase its yield.
