FIELD: chemistry.
SUBSTANCE: invention relates to production of alcohol. The method involves mixing grain material ground to particle size of not more than 300 nm with water in ratio of 1:2-2.2. A liquefying enzyme and an enzyme preparation containing a system of enzymes which hydrolyse non-starch polysaccharides of the grain material and proteolytic enzyme are added to the obtained mixture. The mixture is then heated to temperature of 58-60°C, held for 30 minutes and acidified to pH 4.0-4.5; glucoamylase is added and the mixture is held for another 60 minutes. The prepared wort is cooled; activated yeast is added and fermentation is carried out and alcohol is separated from the obtained wort.
EFFECT: invention reduces power consumption when carrying out the method and increases alcohol output per unit material.
