FIELD: alcohol industry.
SUBSTANCE: disclosed is a method of producing alcohol, which includes preparing a grain mixture, milling, preparing a batch, adding enzymes, saccharification, fermentation and rectification, characterized by that a grain mixture is prepared consisting of rye, barley, oats, millet and sorghum at 20% of the total amount, grains are milled to a size of at least 2 mm, the mixture is cooked, boiled out for 8 hours at temperature of 110 °C, during cooking one introduces Thermolase 800 L bacterial enzyme with consumption rate of 0.35 l/t of standard starch and mushroom enzyme Viscostar 150 L with consumption rate of 0.07 l/t of reference starch, saccharification is performed with application of mushroom enzyme Glucoside 500 L with consumption rate of 0.6 l/t of standard starch.
EFFECT: proposed method increases output of alcohol per unit of raw material.
