FIELD: alcohol industry.
SUBSTANCE: invention relates to alcohol industry. Method for obtaining alcohol includes: breaking the grain of rye on a shock-activating action unit - a disintegrator to an average particle size of 160 microns, mixing with water at a ratio of 1:3.0, holding at 60 °C for 2.5 hours with continuous stirring, application of rehydrated yeast in an amount of 107 yeast cells per 1 ml of wort, additive for nitrogen nutrition of yeast, fermentation for 62 hours at a temperature of 30 °C and separation of alcohol from the brew by brew-purification.
EFFECT: method makes it possible to use raw materials of poor quality, to use native rye enzymes, which accompanies a decrease in the consumption of alcohol yeast and the production of mash with an increased alcohol content.
