FIELD: alcoholic industry.
SUBSTANCE: invention relates to producing alcohol. Method involves preparing raw, its digestion, cooling of digested mass, saccharifying mass with α-amylase, glucoamylase, xylanase, cellulase, cooling the prepared must, fermentation of must and isolation of alcohol. Glucoamylase, α-amylase, xylanase and cellulase are added as the complex enzyme preparation with the following activity of components, U/g, not less: amylolytic, 250; glucoamylase, 500; xylanase, 600; cellulase, 300. Mass is saccharified at temperature 60oC for 2 h and fermentation of must is carried out at temperature 35oC for 72 h.
EFFECT: increased yield of alcohol, simplified method.
